What' for dinner Mom? Asian Lettuce Wraps made with minced turkey I get a lot of requests for family friendly recipes that are healthy yet delicious and do not take ton of time to prepare. I also keep in mind Mom's who are watching their weight so that they don't have to prepare a separate meal for themselves. All of my recipes are home tested and rated by my kids. Being a quick and easy girl myself, i usually simplify steps so that most meals can be enjoyed in 20 minutes or so from start to finish. Healthy, fast, fresh, tasty nutrition is the only way to go. This one is a CA, meaning it is approved by one of my toughest critics, my 17 year old son Cody
Ingredients: 4 servings
• 1 lb Ground Turkey or Chicken
• ¼ cup water chestnuts; drained and chopped fine (optional)
• 2/3 cup mushrooms; chopped fine
• 2 cloves garlic; finely chopped
Also Needed: 2 grated carrots, lettuce for wraps like boston bibb or romaine or kale, 2 finely chopped scallions
• 1 Tablespoon Organic Low Sodium Tamari Sauce (i always suggest organic when using a soy product-available at Longos, Loblaws etc.)
• ½ Tablespoon sesame oil
• 1 Tablespoon rice vinegar
• 1 Tablespoon Hoisin Sauce
• ½ tsp agave nectar or cane sugar or maple syrup
• freshly ground white pepper, to taste (optional)

• Combine ingredients for Marinade and mix well in bowl. Add ground Turkey, chopped Mushrooms, Water Chestnuts and allow to sit for 10-15 minutes.
• Then, stir fry on medium heat the turkey/mushroom mixture approx 15-20 minuets till cooked through
To Serve
• 6-8 Iceberg Lettuce leaves –intact OR Use big leaves of Kale rubbed with a little sesame oil to soften
• 2 Tablespoons scallions; diced – (optional)
• 2 carrots grated
Dipping Sauce
• 4 Tablespoon Hoisin Sauce + ½ teaspoon chili sauce –(optional) + 1 Tablespoon warm water-combine in bowl
Assemble Lettuce wraps like tacos with lettuce leaf as the base and top with scoop of meat mixture (1/4 cup) then grated carrot and a drizzle of dipping sauce-2-3 wraps/serving
